One of the defining features of Thai food is its enthusiastic use of fresh herbs and spices. THAI BARBECUE CHICKEN KAI YANG (Serves 4)
Ingredients:
• 1 packet Thai Barbecue Chicken Marinade
• 900g (2 lb) chicken pieces or whole chicken legs
• 2 tbsp vegetable oil
• Lettuces and/or tomatoes as garnish (optional)
Cooking Instructions:
• Marinate chicken with Marinade and oil. Cover and leave for at least 1 hour.
• To charcoal/electric grill: Baste at least twice with remaining marinade. Turn occasionally.
• To roast/bake: Pre-heat oven to 190 Degree C (375 Degree F) and roast for 30-45 minutes or until cooked. Baste at least
twice with remaining marinade.
• To fry: Pan fry on medium heat until golden brown.
Cooking Tip: Turkey, beef, lamb or duck may be used instead of chicken. For more intense flavours, leave to marinate for at least 1 hour or refrigerate overnight.
